Stuffed Crust

They might turn their noses up at a stuffed crust in Naples but we're here to have fun – and a stuffed crust is definitely fun!
What you'll need:
- Dough Balls
- Flour (we recommend semolina but plain flour also works)
- Pizza sauce
- Your favourite toppings
- Lots of Mozzarella or your favourite melting cheese.
We want something gooey and stringy!
The Method:
- Make sure your dough ball is at room temperature so it's nice and stretchy.
- Drop your dough ball onto a well-floured surface.
- Using a floured rolling pin or your hands (make sure they're dry!) shape and stretch the dough into a rustic circle. Try and reach about 35cm wide.
- Move your newly shaped dough onto a floured baking tray or pizza stone and make sure the dough hasn't stuck to the surface.
- Use as much mozzarella as you like to create a ring around the outer edge of the base you’ve just made. Leave a 1-2cm gap from the very edge of the base.
- Lightly brush some water around the inside of the mozzarella ring.
- Fold over the outer edge of the base over the top of the mozzarella and firmly stick it to where you have brushed the ring with water, encasing the mozzarella.
- Cover with cling film (or damp cloth) and leave to rest for about 15-20 mins. Meanwhile fire up your oven to 250ºC/500F/gas 9. We want it hot!
- Remove the clingfilm off the pizza base and add your toppings.
- Bake in the oven for 10–15 minutes until the crust has started to brown and your toppings have cooked.
- Eat and enjoy!
Top Tips:
Don't be afraid to experiment! Adding garlic butter will give you a cheesy garlic bread crust! Swapping out mozzarella for feta, parsley and spinach will give you a taste of the Mediterranean. There's so much you can do!
